We love Paleo Omelet Muffins! They’re super easy, low calorie, healthy and great to make ahead of time.
INGREDIENTS
8 eggs
1 cup diced vegetables of your choice (bell pepper, spinach, mushrooms…)
1/4 tsp. diced onion
1/8 tsp. ground black pepper
2 tbl. water
DIRECTIONS
1. Preheat over to 350 degrees. Line a muffin tray with 8 cupcake liners.
2. Beat eggs together. Mix in remaining ingredients. Pour egg mixture evenly into 8 muffin cups.
3. Bake until muffins are set in the middle, about 18-20 minutes.
