Do you love taco Tuesday but are looking for a healthier option? Try taco lettuce wraps.
Ingredients:
1 T olive oil
3/4 c chopped onion
1 lb turkey or beef (ground)
1-2 cloves garlic
pinch of salt
pinch of pepper
1 T chili powder
1 t ground cumin
1/2 t paprika
1/2 c tomato sauce
1/2 c low-sodium chicken broth
Romaine lettuce leaves or iceberg lettuce leaves for serving
optional toppings: Mexican cheese, diced tomatoes, diced avocado, chopped cilantro, light sour cream, jalapenos

Directions:
1. Heat oil in a non-stick pan over medium-high heat.
2. Add the onion and saute about 2 minutes until fragrant.
3. Add the ground beef or turkey, garlic, season with salt and pepper. Break up meat and stir occasionally until meat is cooked through.
4. Then add the chili powder, cumin, paprika, tomato sauce and chicken broth. 5. Reduce to a simmer and continue to cook for about 5 minutes until sauce has thickened.
6. Serve mixture over lettuce with desired toppings.
